April 21, 2016 - Domaine William Fèvre 2014 Seminar (Plum Market - Chicago IL): Maturing ripe apple with some lemon custard and faint tropical notes. Good+ concentration, moderate depth and length. Best now.

    Buono

December 11, 2015 - At home with caviar and eggs. Great match with the food and unfinished half of bottle held up well the next day. A fresh and crisp Chablis, with the usual citrus and minerality. While a notch below the wonderful Fevre Montee de Tonnerre '11 a couple of months ago, still a pleasure to drink.

June 30, 2015 - Bright and crisp with med depth and minerality. Seems to have a lot of potential, but it needs to flesh out abit. Tonight it was fairly lean and austere. Still, quite nice.

Revisited at about 3 hours and this really opened beautifully.

February 21, 2015 - One hour in the decanter.
    Pale translucent gold in colour.
Expressive nose rises from the glass. Hint of petrol or texture which dissipates, then sea salt, mineral, oyster shell, undercurrent of lime, grapefruit, citrus, hint of oak and spice.

Plush entry, medium body, rounded texture, stony minerality. Bold fruit, lime zest, lemon rind, pink grapefruit, under ripe white stone fruits. Mid palate tangy, zesty citrus and medium minus acidity, metallic lick and steely teeth cleansing. Good acidity and mild oak long into the endless zesty finish.
