    January 10, 2015 - Amber +3 color. Nose of roasted apricot, peach, toasted nuts, caramel and burnt sugar cake, black peppercorn, in a well-oxidized character. On arrival, bone dry and vivid acidity. In the mouth, fruity and woody and sweet-sour. Delicious. Paired well to wild mushroom soup, tahini and homemade crusty Italian style bread (an improved Emeril Lagasse recipe). The bottling strength is deceptive - taster beware ! Bottle #1 of one.

    December 10, 2014 - Very enjoyable. More high pitched nose than the Oloroso. Citrus, white raisins, fruit cake . Nuttiness is more in the direction of cashews. Ligher mouthfeel, a bit more acidity. Citrus, more in the direction of candied orange peel (but again, no residual sugar), returns at the end of the long finish.

    November 7, 2014 - Very dark for a palo cortado. For me, that's a shame. This leans very far into the oloroso spectrum, and the biological aging/flor characteristics that a good PC should have are largely masked by the brooding oxidative characteristics typical of oloroso. This is a bargain and delicious, I just would like a little more saline and mineral edge to cut through the walnut and caramel notes.
