November 9, 2020 - The bubbles have faded a bit to a now perfect carbonation level. Pours a golden straw color; if it weren't for the bubbles, it would look like a viogner. Compared to prior tastings, the acidity and green apple are much more balanced, with the nutty flavors becoming a bit more prominent. This particular bottle had the slightest bit of oxidation, which made it much better overall. Drank over two days (stored overnight with a champagne stopper) with no impact to the carbonation and oxidation.

December 24, 2018 - Bone dry, crisp, small bubbles, apple, vanilla.
June 9, 2016 - Not quite as dry as I was expecting, though quite refreshing. Nice straw color with good acid, finish made me think of manzanilla sherry.
Paired well with tapas consisting of manchego and roasted red pepper topped crostini and assorted pickled vegetables.

March 16, 2015 - Bone dry, as advertised. Green apple, toasted nuts (almonds maybe?).
January 6, 2015 - As advertised: bone dry with a texture I'd describe as more crisp and acidic (think tart green apple) than rich and yeasty. Very food friendly and could easily substitute for a dry riesling.
November 30, 2014 - This was tight and structured, with a clear yeastiness on the nose and a core of apple, lemon, and cinnamon in the mouth. Well made and a nice way to celebrate Alabama's record-setting victory over Auburn.
April 22, 2014 - Brown Bag Wine Dinner at Two Chefs - Double Blind: The wine looks straw colored. The legs are medium. It smells like lemon, geranium, hazelnut and baker's yeast. The body is light. The wine has smooth texture. The wine finishes short. The wine has medium acidity. Alvaro's bubbly.
October 31, 2013 - Tart apple. Very good but prefer more yeast/dough flavors.
