At that time, there was a stack of these on the floor locally and I recall balking at the price of $139 so I bought just one so I could add to my inventory. I know I am not alone in making this error. Floral with green apple, a honeyed apple actually, good energy and youthful. Powerful rich showing a chalky flinty finish. With more air, probably 4 hrs after I opened it, plenty of yellow apple and beautiful orange-driven citrus, which is such a hallmark of the Blanches Voies plot where this cuvee's fruit originates outside the village. Thankfully, the group left this behind so I can drain the last glass of this tonight....finished up the final glass tonight. My takeaway (the wine is pretty much still too) is a more plump, luxurious, juicy wine after the full day this has been open. There is a creamy lime element that is seductive, along with a gentle but persistent minerality that flows through the finish. This is aging so gracefully, a gorgeous wine in its presentation. This only makes me love Vilmart even more, if that was possible.

    Remarkably floral Nose – confident and elegant fruit aromas pull you into the equally-graceful bright fruit tones on the palate; pleasant barely-sweet pastry note, too. Feels as if there’s still potential to fill-in the back end, which will be to its benefit. Drinking young, with no meaningful tertiary flavor development; if anything, it’s in its open-and-relaxed/youthful stage, which makes it a lot fun to drink right now.

    February 9, 2024 - Chalky lemon zest and oils on the nose. This explodes on the palate with zesty minerality and really pretty jasmine floral notes. It opens up broad with fruit from many corners; apples, grapefruit, apricot, all with great freshness and a lovely mild candied sweetness (perhaps related to dosage 8g/L?). Autolytic notes are balanced amazingly well within all of this, with a long chalky finish predominantly speaking of lemons.

    Agree with many previous notes that the acidity right now is massive and this lends the wine great pairing potential with many types of food, but would love to try again in 5-10+ years when it's calmed down a bit. Beautiful!!

    January 6, 2024 - The 2008 is really getting into the zone about 8 years after degorgement. Notes of lemon zest, lemon oil, sweet spice, chalky minerality, some autolytic notes, some honey, also some orchard fruit, but there is also that fresh, super nice streak of minerality and acidity. Medium-full bodied, layered, with excellent persistence and high acidity as well as medium mousse. Very long finish with very good complexity. A superb Champagne of the highest level. In a good place now but can age for another 10 years or so.

    December 19, 2023 - Vilmart CdC + 08 vintage = love. Zippy acidity, freshness, so much od everything. Enjoyed a vertical a few weeks back of the 02, 04 and 06 several weeks back. this 08 had everything... and more
