    October 29, 2023 - This is a stunning Champagne: stone fruit, yellow apples, brioche, citrus, lemon cheesecake.
    Succulent, elegant, ripe, fresh and just plain excellent.

Initially I sensed a caramel quality in the aromatic, and then later the evolution of that quality, which was also in the palate, expressed as a salted butter quality, what I believe Counselor Seiber may have called browned butter. Good structure, some tension with a note of minerality. And, like I often find with GCdO, it takes the fruit to a more richer place. 2nd bottle of this since release, and been a while since I have opened one, and I thought this showed well.

    December 17, 2021 - (Disgorged in June 2019, 20% Pinot Noir and 80% Chardonnay)
    Youthful with marzipan, biscuits, baked bread, minerals and refreshing lemon citrus zest on the delicious nose. Pleasant acidity showing yellow apples on the youthful palate combined with biscuits and cream before a citrus zesty bitterness takes over on the lengthy finish.
