October 29, 2023 - This is a stunning Champagne: stone fruit, yellow apples, brioche, citrus, lemon cheesecake.
Succulent, elegant, ripe, fresh and just plain excellent.
August 10, 2023 - June 2019 disgorgement disgorgement. Served side-by-side with the Coeur de Cuvee (both done blind). 80/20 Pinot Noir/Chard. 7 gms of dosage. Initially I sensed a caramel quality in the aromatic, and then later the evolution of that quality, which was also in the palate, expressed as a salted butter quality, what I believe Counselor Seiber may have called browned butter. Good structure, some tension with a note of minerality. And, like I often find with GCdO, it takes the fruit to a more richer place. 2nd bottle of this since release, and been a while since I have opened one, and I thought this showed well.
May 3, 2023 - Light mousse. Lemon, grapefruit, hint of stone and apple.
Some yeasty notes.

September 27, 2022 - Delicious with raspberry, baked apple and lemon curd notes. Nicely balanced acidity showing some yeastiness at the end.
January 19, 2022 - disgorged June 2019, 80% Chardonnay and 20% Pinot noir. Richer and weightier than I expected at this youthful stage, but still full of fruit and lemon curd. Exactly what I’ve come to expect of Vilmart and delicious.
December 21, 2021 - From 45+ year old vines. 80% Chardonnay, 20% PN, disgorged June 2019. Precise, focused, wonderful fruit, high acid in its youth but not in a distracting way. This is absolutely delicious right now, and will definitely get better.
December 17, 2021 - (Disgorged in June 2019, 20% Pinot Noir and 80% Chardonnay)
Youthful with marzipan, biscuits, baked bread, minerals and refreshing lemon citrus zest on the delicious nose. Pleasant acidity showing yellow apples on the youthful palate combined with biscuits and cream before a citrus zesty bitterness takes over on the lengthy finish.
