    January 18, 2015 - Full yellow. Man, this just exuded young Chablis aromas-all shellfish, white flowers, and iodine. It also tasted like very young Chablis with tart citrus, racy acidity, and fantastic back end minerality all playing leading roles. As it warmed and aerated, more ripe lemon came to the fore and there was just a hint of some butteriness of texture to complement the tremendous underlying structure, but neither of these elements overtook the essentially lean Chablis quality of this wine. I pulled out this bottle of 2005 expecting a somewhat rounder, more mellow rendition and was surprised and delighted with what I found tonight. In my experience, within the Dauvissat Premier Cru stable, it is the Sechet rather than the Vaillons or Forest that is most likely to show this stricter style.

    August 27, 2014 - Chablis Fest (Shaw's Crab House - Chicago, IL): Lots of firm citrus notes with great minerality and florals. Loved the tenseness of the palate and the richness of the fruits. Lots of lime...I liked that a lot...gave it a bit more acidic spine.

    June 7, 2014 - Pale straw in color. Nice nose of mineral and apple. Shines on the palate. Wonderful balance of mineral and chalk with a subtle dash of apple and pear. Delicious. Not a hint of premox.

    04/10/14 decanted 30 min. yellow-gold; this bottle is more opulent than previous, w/none of the oxidative notes found in that one, lemon blossom, saline, some honey (perhaps botrytis?) notes; med/++ weight w/tangible extract on the palate; in a richer style, displaying white fruits, citron glace, salty, wet limestone, orange zest acidity. the color appears disconcertingly advanced, but this bottle is showing nicely in the full style of the vintage.

    cornmeal-dusted jolthead porgy w/lemon & sweet pickle remoulade; baby butterbeans w/orzo, sweet potatoes & buttermilk dressing

    June 27, 2013 - Digging into some Savigny-Les-Beaunes (Browntrout, Chicago IL): Nose: Very fragrant nose with layered tones of pears, apples, gun flint, white florals, and white peaches. There is very good depth to this with very good balance too.

    Taste: Light bodied with medium/high acidity. The structure is still showing some youth with balanced tones of pears, apples, gun flint, and white peaches.

    Overall: This was drinking quite well. It didn't show any prem-ox and instead showed a chablis that is starting to grow into maturity.
