    August 27, 2014 - Chablis Fest (Shaw's Crab House - Chicago, IL): Lots of firm citrus notes with great minerality and florals. Loved the tenseness of the palate and the richness of the fruits. Lots of lime...I liked that a lot...gave it a bit more acidic spine.

    June 7, 2014 - Pale straw in color. Nice nose of mineral and apple. Shines on the palate. Wonderful balance of mineral and chalk with a subtle dash of apple and pear. Delicious. Not a hint of premox.

    October 12, 2013 - decanted one hour. yellow-gold; white orchard floral bouquet dominates nose w/some honey & beeswax behind, faintest disconcerting oxidative notes; med/++ mouthfeel, tangible viscosity; white peaches & mixed citrus marmalade, salty & chalky seashell, a little more blowzy on the latter part than I'd really feel comfortable with for the very longterm. fifth of 12, will redirect the accompanying food for its evolving status.

    04/10/14 decanted 30 min. yellow-gold; this bottle is more opulent than previous, w/none of the oxidative notes found in that one, lemon blossom, saline, some honey (perhaps botrytis?) notes; med/++ weight w/tangible extract on the palate; in a richer style, displaying white fruits, citron glace, salty, wet limestone, orange zest acidity. the color appears disconcertingly advanced, but this bottle is showing nicely in the full style of the vintage.

    cornmeal-dusted jolthead porgy w/lemon & sweet pickle remoulade; baby butterbeans w/orzo, sweet potatoes & buttermilk dressing

    June 27, 2013 - Digging into some Savigny-Les-Beaunes (Browntrout, Chicago IL): Nose: Very fragrant nose with layered tones of pears, apples, gun flint, white florals, and white peaches. There is very good depth to this with very good balance too.

    Taste: Light bodied with medium/high acidity. The structure is still showing some youth with balanced tones of pears, apples, gun flint, and white peaches.

    Overall: This was drinking quite well. It didn't show any prem-ox and instead showed a chablis that is starting to grow into maturity.

    December 15, 2012 - Decanted and poured about fifteen minutes later. First impression - at least it's not corked. This wine begins subdued on the bouquet and is initially most notable for its wonderful textured finish of oyster shell, chalk and acidity. Airing brings out more expressive aromatics that consist of oyster shell, lemon zest, chalk, stone, green apple and some underlying more mature honeyed notes. The color is a light to medium yellow that is correct for its age but perhaps somewhat on the darker side of the acceptable spectrum. On the palate this offers excellent balance and a wonderful medium length finish. This is at or around its peak but should continue to drink well over the next 3 to 5 years. Purchased on release and imported by Vineyard Brands.
