    April 1, 2022 - Opened at (cool) room temperature and that seems to work well. Aromatic and interesting - roughly along the lines of apricot, dandelions and gravel. Similar flavors, good tasty fruit without being overly primary, medium-bodied, lifted by good acidity, with lingering saline and stony minerality. Good stuff and a good value. Blend of Trebbiano, Malvasia and Verdicchio.

    February 13, 2022 - One of the more enjoyable Coenobiums I've had. Hazy med sunflower dust color. Yellow apple and dried yellow flower. Light and fun with just a hint of tart funk.

    July 4, 2021 - Color: medium gold
    Nose: leads with fermented honey, think mead, and a ton of minerals. A raisin/dry fig quality. Herbs and almost i would guess stems. But then we are back with crushed stone
    Palate: really peculiar, salted caramel candy, bits of raisin, minerals aplenty. Oily. Big texture and medium acidity for a full body feel. The alcohol is balanced. Meditation wine but dry
    Finish: medium

    Needs air, not great cold, needs room temp

    April 17, 2021 - Some skin maceration here; but still definitely a white wine. Yellow apple, pear, orange peel, white peach on a bed of hay/straw. Fresh herbs and beeswax; but nice tart fruit notes throughout. . Medum + body, nice finish and low alcohol.

    March 27, 2021 - Welcoming sweet and white floral nose, characteristic of skin contact. But very clean and complex, good mixture of dry apples, touch of rosemary, and Christmas spices. Dry palate in contrast, metallic, sea salt, and slight bitterness. Lingering taste is a mixture of metal, sourness, and tinge of sweetness arriving in waves. I love this wine!

    March 20, 2021 - The floral yellow gummy bears note got it right.

    This wine just kept getting better and better with air. Revisited it 12 hours after opening and it was still developing.

    Not a super dramatic texture, but otherwise a very complex and intriguing wine. Would love to try it with substantial age.

    October 19, 2020 - gummy life savers and flowers, light on the palate with a long, pleasing finish. the extra ~9 months in bottle were very good to this wine
