    August 1, 2017 - Dinner at TDS (Chicago, IL): A real full and polished nose that is still quite fresh with ripe apple. The palate is round and rich with prominent barrel notes. Acids here are light but sufficient to keep the palate fresh. Mouthing-coating and voluminous. A super enjoyable and mature Champagne.

    August 1, 2017 - Dinner at Table, Donkey and Stick (Chicago, IL): Everything about this wine, from the packaging to the finish, is gorgeous. There was a bit of bread and a decent share of oak on the nose, as well as a generous helping of sweet orchard fruit. The palate has ample fruit as well, as well as a slight touch of nuttiness (though the hazelnut/almond tones definitely increased with more air). Not heavy, despite the oak and oxidative treatment, but everything is in perfect balance. This is an intense and potent champagne, still on the upswing, but I am more than pleased to have caught this where it is tonight.

    May 7, 2017 - My last bottle. This is practically ageless. The fruit tastes just barely more mature than it did when it came out. Just the slightest hints of sweeter jam flavors on the deeper end of the scale. But for the most part it's as bright as a ray of sunshine.

    December 2, 2016 - CdBdx Gala Dinner 2016 (Pollen): Woah this was good! From magnum bottles. Drank from white wine glasses. Served as an aperitif to start, but this is far from an aperitif. In your face serious.
    Appearance is clear, pale yellow-lemon colour. Fine fading fizz. Legs.
    Nose is clean, medium+ intensity, with aromas of nutty toast, brioche, seashell minerality, citrus lemon-lime, some smoke. Developed.
    On the palate, dry, high acidity, medium- alcohol, medium+ body. Medium+ flavour intensity, with flavours of rich citrus lemon-lime, nutty toast, creamy brioche, seashell minerality, and a sensation of sweet floral perfume filling the mouth. Long finish.
    Outstanding quality. Tastes developed but fruit still going very strong. Enjoy, why wait anyway.
    A specialty cuvee (apparaently no longer made) that is fermented and aged in Barrique as well as given five years on the lees.
    Blend of 70% Chardonnay and 30% Pinot Noir. From the oldest vines on the estate and represents a mix of old and new for Vilmart - the old of the vineyards and the new of the barrique barrels that it is fermented in.
