April 11, 2024 - Not much has changed in 3 1/2 years. The color is golden, there are marks of orange confit, bees wax, honeyed fruits, pepper and Asian spices. Very good acidity which keeps this on the fresh side. Lively, complex wine. Mature, I think, but then again - consistent notes over many years now.

December 31, 2020 - Opens up with a complex nose of apple, orange and curry. Shows the same, intriguing complexity on the palate with marks of green fruits, fennel, pepper, asian spices and stones. It’s a rich wine in terms of complexity of taste but yet soft and rounded on the palate. This hasn’t changed much over the past 3 years so I’m sure there’s plenty of life left. On the other hand, will this get any better?

September 9, 2017 - PB 50 Rayas Extravarganza (PB's house, Charlottenlund): More strict than 06, more on the minerals, the stone presence. Fine acidity. Very much alive, could improve. 92+ points.

May 10, 2017 - Opens up with a nose of spices, orange jam and fennel. Rich but fresh palate with marks of garrigue, fennel and white pepper. Complex, interesting wine. Outstanding. With Niels in Kandestederne.

May 2, 2016 - Grayish 14k gold. Medium intense nose of waxy tropical fruit. The palate is intense but not heavy, overripe apple, musky exotic fruit, unusual, almost sweet edges, and very ripe finish redeemed by a slightly tannic and alkaline zing. Not my favorite style but an excellent example. Enjoyed with Niçoise salad.

January 31, 2015 - Dinner at Peter & Susannes new house (Charlottenlund): Considerable richness here, creamy, mineral stuff, a typical white Rhône-wine. Nice, approachable, worked well with charcuteri, but far (also in quality) from the 2004 white Rayas, that I have fond memories of. With P&S - in DK.

January 23, 2015 - Rich and full wine, clearly Rhone. The fruit is exotic in nature but there's a good underlying freshness. Needs food. With Niels and Anne Dorthe at home.

March 18, 2014 - Displaying beautiful aromas of melon, pear, honeysuckle and beeswax, my last bottle of the 2004 Fonsalette blanc was also the best. It is hard not to appreciate the sappy intensity of its flavors, or its complexity and balance. Comparatively low in acidity, this wine marries exceptionally well with a variety of cuisines or on its own.
