May 19, 2017 - Emptying the Fevre stock as quickly as possible

May 1, 2017 - Tasted alongside of 08 and 09, this was the best of the mini-vertical. Nose got better when slightly warmer with lime blossom, honey lozenges, iodine, citrus (lime/lemon) and some pear. Mineral profile is shining from start to finish with spiced baked pears, lemon/lime and lavender honey. Great tension, no sign of premox. In a great spot but a year or two extra will add some dimension. Paired really well with snow crab.

March 25, 2017 - Balances lemon and minerals with the oatmeal / cookie-dough characteristic of aging. I've come to realize that I prefer younger Chablis with just the lemon and minerals. But variety is the spice of life, and aged Chablis is good too.

January 6, 2017 - Mineral and nuts in the nose, almost without any fruits. Still good acidity.
May be it shoukd be drunk a couple of years earlier...

January 2, 2017 - Seems a bit oxidized- never really changes in the glass- either freshening up or getting worse. Could be a dumb phase, as the oxidation impression is slight- but it does mask any complexity or interest
