December 24, 2015 - Tremendous. I've backed off the non dose/100% Pinot thing, but have a few back vintages of this wine in the cellar -- thought I'd give this a whirl this evening. This is WOW wine. Surprisingly, some noticeable ullage. Berry, toast, brioche nose: seemless red berry candy vinous palate. Caressing bubbles. Soft, balanced, cerebral. More of a quaffer as there is little sugar here. Better with air and at a warmer temperature. Much more enjoyable from a Zalto Universal than a Zalto Champagne glass, no surprise. Probably worth it to cellar some of the higher end Bouchard wines and see what happens. Now curious to try the other vintages of this wine remaining in the cellar. Bottle age is indeed kind to these wines. First of two bottles purchased June 2010, sleeping in the cellar since that time.
