April 1, 2023 - Open in the bottle for a couple hours. These old Pax wines always have such an explosive nose. This one is black cherry liqueur, beef broth and licorice. The palate is full but bright, light, lifted, hard to believe it’s almost 20 years old. More ripe cherries, cherry licorice, violets, a crushed limestone-y bitterness. Fantastic acidity and smooth tannins, great balance. I wish it were a bit more savory (just my personal preference in Syrah) but I can’t argue with how hard it is to stop drinking it!
