January 28, 2024 - The mid-end palate of the smoke, pepper, game is still there, but the front palate feels like the fruit is fading. More sour cherries with a hint of ripe strawberries.
Delicious but prefer it with less faded fruit.
April 1, 2023 - Open in the bottle for a couple hours. These old Pax wines always have such an explosive nose. This one is black cherry liqueur, beef broth and licorice. The palate is full but bright, light, lifted, hard to believe it’s almost 20 years old. More ripe cherries, cherry licorice, violets, a crushed limestone-y bitterness. Fantastic acidity and smooth tannins, great balance. I wish it were a bit more savory (just my personal preference in Syrah) but I can’t argue with how hard it is to stop drinking it!

June 1, 2018 - Similar notes as previous tasting except this bottle showed more licorice, spice, and floral notes. Medium to long finish.
December 16, 2017 - Just fantastic. Still drinking very well and seemed as if it’d hang on for some time yet. Very Northern Rhône.
November 23, 2017 - Initially grapey, plums and balsamic reduction. Seemed last it’s prime.
This really needed 2 hours in a decanter , and it paid off.
God base of plum and smokiness and red apple and loads of bacon fat.
The palate is lush, not fat, structured with a deep cherry. Great acidity.
Big fan of this wine.
October 8, 2017 - No formal notes. Popped and poured. Solid balance: the fruit has toned down and the tannins have mellowed. Still a robust wine and enjoyable to a more old-world leaning crowd. Prime drinking window.
August 11, 2017 - Deep black fruits, licorice, wood, and a touch of herbalness in the nose. Black cherries, blackberries, and plums in the flavor. Medium to long finish. Drink over the next few years.
