Thursday, October 30, 2014 - Medium tulip yellow. All truffle honey at first, but with an hour of air, its essential Chablis iodine and oyster shell shone through. Rich entry with fruit there that is difficult to characterize; this segues into a finish that is full of crisp acidity and minerality. As it opened, it continued its transformation from a wine that could be confused with a creamy Grand Cru white Burgundy into a more and more easily recognizable Chablis. Fully mature, although much more alive than other bottles I've had over the past few years.
