Saturday, May 5, 2012 - Lemon curd, ashy palate. Again, just great along side these unnamed cheeses. Laser pear fruit on the palate. Damn diamond-like. Starts to open up into the honey comb as well. Along side Ridge 2010, these seem to start at opposite ends of the spectrum, only to meet in the middle.
After a four hours open, the mint, spearmint starts to come to the front.
