Saturday, April 4, 2015 - Double decanted four hours before serving. Then the sommelier at Bouley poured in the glass for forty minutes while we drank a 1996 DRC Echezeaux. We drank over the next hour with our respective courses of lamb, duck, and venison. The rich smooth blackberry is rubbed with saddle leather, caressed by cassis, and rolled in graphite. Spice, licorice and violet and a smokey forest waft through this smooth balanced beauty.
