Friday, May 5, 2006 - Avery nice Chablis. Color is pale straw gold with a hint of green. Nose shows lemon oil, quartz, and a hint of cut grass. Palate shows a lot of bright citrus up front with a secondary bit of honey. Underneath this is a foundation of stone and mineral and it is all brought together with excellent acidity. Has a long finish but, as was mentioned in a previous note, it's not all together yet...the ingredients are there for a truly fine Chablis in several years.
