Friday, February 10, 2012 - Wildman New Release Burgundy Tasting (Peninsula Hotel - Chicago IL): Barrel sample. Red berry aromas with a slightly floral start, along with some coffee. Sweet red and black cherry flavors with moderate density and power with fairly substantial tannins dominating the middle today. Good meaty spice emerges on finish. This will certainly need plenty of time in the cellar.
