Saturday, January 18, 2014 - Opened the bottle. Checked the cork. Was not dry nor did I see any signs of breakdown. So assumed it was ok to drink. Seemed a little astringent in the beginning; after letting it sit for about 30 mts it opened up quite a bit. Would have expected less of an influence from the tannins since the wine is past it's drinkability according to the experts. First time writing about drinking wine. So I am not sure if I am on the right track.
