Friday, August 14, 2009 - To my palate this is the real thing. It starts off with a nose of medium to medium heavy toast oak, which at age 5 still dominates. I think I taste a slight volcanic soil profile. It is starting to show some maturity. The secondary flavors are starting to evolve. The cocoa, and maturing vanilla are drowning out the slight amount of green bell pepper. The top of the mouth tannins show it will still age, and might become even more interesting. There is a richness to the acid that encourages some more aging. Very smooth. Nice job.
