Tuesday, January 7, 2014 - On the first night I opened this, it came across extremely acidic and fairly light bodied. It seemed like a summery white that could do with a chill. However, after being open a few days, it seemed to put on weight, richness and complexity. It has been open 6 days now and is still drinking well, though a little faded. The acidity has mellowed out a bit and I am drinking it at cool room temperature (64).
