Sunday, February 24, 2013 - Definitely not a pop and pour by any right, rhyme or reason, but what a exercise in the difference that air makes. This evolves over a 30 hour period, with me trying at open, 1, 5, 24 and 30 hours. The biggest differences are the relative bookends: 1-5 and 24-30 hours. The 1-5 jump is when you go from a hedonistic but tannic wine to starting to show depth as the tannins loosen and begin to integrate. Then, it starts to show its true self, with layers of dark fruit and some spicy flavors and finish that To Kalon can bring. Outstanding wine.
