Saturday, October 31, 2015 - Light lemony gold colour. Nose is an explosion of fresh ozone, oyster shells and newly-baked yeasty bread.....all very lifted and high-toned as you would expect from a Blanc de Blancs but even more so and in a good way. Palate is very sharp but refreshing, chiselled, very oyster shell and oyster jus, Epsom Salts, quite acidic on the swallow but with lovely pinpoint, pinprick refreshing high piano notes. Still very young but really lovely. This really goes well with even quite heavy seafood, such as lobster spagettini with caviar, because of its acidic and fresh cut. Worthy of being labelled Champagne. This has years ahead of it to improve but is immediately accessible if you like your Blanc de Blanc sharp and chiseled.
