Monday, March 19, 2012 - Buckwheat honey, noble rot, carmelized green apple, poached pear, touch of orange zest, commanding and fabulous acidity. This is a wine I would just sip on the deck, unadorned by food and watch the sun set. Gilded the lily with this wine, but this great Chateau can do whatever it wants and it can do no wrong. Thank you Chateau d'Yquem for gilding this lily. Transcendent expression of Sauterne.
