Monday, August 19, 2013 - Accessed with Coravin. Medium-gold color. Classic Riesling nose of honeysuckle and petrol, but all very faint. Sweet but clean palate with sedate acidity and a faint note of stone. Not much finish, with the airiest wisp of tart lemon flavors. Slightly past its prime, this will not improve much and should be consumed immediately. Would be nice as pairing with lighter desserts (fresh fruit, berry tart, etc).

8/19/2013 9:18:00 PM - Thanks for your note. It's quite contrary to our recent pleasures from this. We assessed it as a still very young fireworks display. This is definitely built to last and evolve. So, we started thinking that maybe you suffered a poor btl?
(Ours brought out the best from Fois Gras.)

I have two more bottles in the cellar, so will certainly be revisiting this with high hopes. The foie gras suggestion is a good one; I was thinking this might be a nice substitute for heavier sweet wines like Sauternes, for when a lighter pairing is required.

As you wade your way through German Rieslings, you get acclamatized to their fantastic ability to marry almost any kind of food. The sweetness is something that disturbed me in the beginning, but not anymore. Some ppl think these wines are too uniform or too subtle (or too sweet). But, that's just personal taste, and taste evolves.
Better luck with the following btls, and there's no need to hurry to the next encounter.
(I do conscider Kabinett, Spätlese and Auslese "food wines", and the sweeter types like BA and TBA as cheese or desert wines. Wife is against the idea of sweet wine, but drinks them with a smile when they are served.)
