Saturday, July 11, 2015 - It's hard for me to review champagne because I've never had a champagne I don't like. They all taste great and they're typically pretty complex.

I recently had the 2004 Dom Perignon so I can use that as a reference. The Dom Perignon was heavier, richer, and more powerful.

This Bollinger is softer, brighter, and more elegant. It offers flavors of brioche, apple, lemon, and honey. I think it is more enjoyable now than the Dom Perignon. But my instinct is that the Dom Perignon is a much better wine.

That said, I feel like the Bollinger too would benefit from several years of aging, as the flavor profile has jagged edges. In particular, the toasty brioche seems out of whack.
