We enjoyed this one with a roast chicken (which worked surprisingly well), but the interesting pairing was with a scalloped potato in a light cream sauce with jalapeno and herbs. The wine worked wonderfully with the spices. Another writer mentioned that this is good for lighter foods. While it complemented the roast chicken, I think this would be great with southern French dishes -- cassoulet, Provencal flavors, etc. In sum, a versatile wine that can pair with a range of favors.
