Friday, December 25, 2015 - Audouzed in the cellar for 12 hours. Throws a fair amount of sediment, so stand it up a few days before serving. Full bodied with a lovely deep color. Black cherry flavors predominate, with an underlying mineral streak. Tannins were quite smooth after extended air. Acid balance was excellent, and finish was very good. This brawny yet classy wine seems like an excellent pairing for steak.
