Monday, May 21, 2012 - This was tasted at the winery. JP degorged it in the cave and then served it to us upstairs with no dosage. This is 60% Chardonnay and 40% Pinot Noir. With no dosage it is exceptionally dry - about .1% residual sugar. Yeast and toast are the dominant flavors and bouquet. Amazingly complex and long finish. Superb!

    12/21/2013 7:04:00 PM - This Champagne is now available from selected Spec's stores in Texas. To my knowledge ONLY Spec's has this Champagne for it is my understanding that it was custom ordered from JP Marniquet with no added sugar following the above tasting (which was with their lead buyer). The lack of sugar addition in the dosage and the extended period on the yeast makes this a very unique Champagne. Salud! NOTE: While I am a devoted customer of Spec's I have NO involvement in their business other than being a customer. I am providing this comment only to aid those who may be interested in obtaining a bottle of this Champagne!

    4/30/2015 5:55:00 AM - This was seriously complex, but it took a lot of time and patience to open up. I am sure at the caves it showed better, but it had stiff competition with so many wines in Texas. Its strange to see so many high scores, but I don't think the people that didn't find it great bothered to write down their thoughts. For the $$$ this is very nice.
