Thursday, December 20, 2007 - I have been a little worried recently that I was liking everything I tasted--am I becoming too uncritical these days? Well, at first taste, I thought: "Here is a wine I can safely and honestly dislike". Downright tart and apparently thin, this was showing little fruit and a lot of acidity. Finally, I can show I am not a pushover--I don't like everything. Well, with another 30 minutes in the glass and to the accompaniment of a pork tenderloin, this one pulled another Burgundian fast one on me--while I was not looking, it morphed in to a much stronger, more flavorful glass of wine, even if one would have to classify it still as on the slightly austere side. The nose is now an airy mixture of red fruit and mineral dust, while the mid-palate now seems much more mineral than acidic (even if we know these aren't real soil minerals, just those dad-burned organic acids firing on the mucosal tissues). Not bad, even if this one was cracked wayyyy too early...
