Thursday, July 31, 2014 - Tasting with Florent Baumard (Chicago, IL): Rich and sweet, with coconut the dominant characteristic on the nose and palate. There's a slight bit of dried fig and nutty character, as well as some of the caramelized pineapple you might find in an upside-down cake. Sadly, the acidity's a bit low on this one. I'd love for this to have more acidic grip.
