Sunday, January 28, 2007 - Decanted at 5pm. However, as a prelude, I couldn't resist trying the wine now. In the glass, medium to dark red, clear, with a gradual shading to pink at the rim. A nose of strawberries and cedar, not unlike the bouquet I remember from a bottle of 1989 Mouton, consumed in 2001, that sucked me into the world of wine. On the palate, strawberries, blackberries and herbs, quickly overwhelmed by mouth-puckering tannins. I hope a couple of hours is enough to open this one up for dinner.

7pm: The cedar and strawberries on the nose have receded to reveal dark fruit and pepper. Dark, sweet black fruit with herbs; the tannins are still there, and still dominate, but not in quite as overwhelming a fashion. Long finish. No sign of horse, funk, or dung here, just pure fruit and signs of herbal complexity.

8:30pm: Raspberries, blackberries, and a satisfying mix of herbs on the palate, with a silky mouthfeel and a touch of sweetness on the mid-palate, at least until the tannins kick in. I'm quite sure this could sit in a decanter for several hours and still not be fully open for business.

I'm going to try to stay away from this for at least five years, as it has all the elements to evolve into something special, but it will be hard. Very hard.
