Thursday, June 11, 2015 - A silky smooth glass of deep purple, tasting of chocolate, black coffee, ripe blackberries, black currant. This is a fine, full-bodied wine, its intense ripeness cut with a hint of green and a flinty edged finish. It was almost too much for the salmon burgers it was paired with, but ultimately we decided the wine played well with the salmon and the minty creme fraiche dressing lightly slathered on potato buns, which brought out the lean, vegetal aspects of wine. Drinking this versatile pinot noir with, say, grilled lamb chops might bring other flavors into prominence.
