Tuesday, May 17, 2011 - When first opened it was light, tart and acidic. Dark and opaque. Lots of cedar, green pepper, spice. But where's the fruit? It gained some life after vinturi and 8 hours of air, but despite some hints of class and elegance I never got that 'opulence' Parker was tasting (not that I was looking for heavy extraction). Perhaps its shut down but there's a greenness in the nose and palette that never went away and I'm somewhat skeptical of how this will turn out ...
