Friday, June 17, 2011 - Wow! What a pleasant surprise for a 10 year old chard I feared was gone. Any hint of oxidation blew off in the first 5 minutes. A small amount of acidity was still there to add some vibrancy. Color was golden yellow, flavor was honey, pear amd peach. Nose was a little sublte but the flavors really exploded as it warmed in the glass. Actually went very well with a spice rubbed Salmon.
