Friday, September 16, 2011 - Decanted 1 hour drank over 2 hours with veal chop/proscuitto and balsamic reduction. Nose developed dark fruit, earth/barnyard. Palate with herbaciousness and spice. Nicely integrated and balanced. Enjoyed during prep but absolutely excellent with the meal.
