Sunday, March 8, 2009 - This wine is opened and poured. It can be best described as showing multiple personalities. Over the course of the evening the wine continues to evolve, devolve and change. Initially this wine was forward and perfumed on the bouquet, but backwards, tannic and tart on the palate. Airing caused the perfumed elements to retreat to the background and bring out brooding, dark aromatics while the palate became more approachable and even velvety in texture. The transformations of the wine were not linear however, at times both the aromatics and palate retreated to a more stern personality. All the components are here for the wine to age very well. This wine places an emphasis on structure and power compared to the '05 Chevillon "Cailles" that showed a more pretty and elegant personality. This is outstanding but a few more years of bottle age should benefit this wine and smooth out all of the elements currently going on.
