Sunday, November 30, 2014 - A perfect cork a clean bottle. The color was dark like an orange marmalade tone. Usually it's a bad sign or Pmox but this wine doesn't posses a sugary sweetness. Nose smells of an old flat Dom perignon. There's a slight soy quality but still freshness from the minerality. On the palate it drys up quickly. Cleans up tight and lean. It leaves a long lingering toffee coffee tartness. It's sweet but in an umami way.
