Saturday, December 24, 2011 - Checked at opening and then ran thru a vinerator into the decanter for an hour. The change was impressive as it moved from sharp to smooth. A very complex nose with fruit and hits of chocolate. Earthy taste but remarkably light for a cab. Hints of strawberry with a smokey, smooth finish. Continued to develop and became drier and smoother with time.
