Tuesday, December 23, 2014 - Absolutely beautiful, weightless, fully resolved but still some tannin lingering to provide structure. Tea leaves, VA, dried cherries, dried mushrooms, an old can of skoal wintergreen, autumnal funk. Maitake, shimeji, chanterelles or white truffles will really elevate this!
