Thursday, December 29, 2011 - Champagne Tasting (Waterford): 50% Chardonnay, 50% Pinot, 84 months on the lees with no oak. Focus and intense nose with yeasty high notes. Like scotched oak and brown sugar. Mineral like wet granite. Long long finish with precision on the palate.
