Tuesday, October 2, 2012 - At Troquet, Boston MA. Always a treat to savor a CB! Decanted from 750 for almost an hour as we eased into our main courses. This took nearly all that time to stretch its legs. Interestingly, the aromatics were a bit too shy/restrained - very soft cedar. Color is perfect, little/no bricking. This was simply very well balanced: soft, while firm. Lush and silky, full mouthfeel, yet (very surprisingly to me) not all that concentrated. I would err on the side of drinking this soon - i.e. I think the CT drinking window is pretty spot on. Drinking very well but, hard not to be slightly disappointed when a Grand Cru Chambertin steals the spot light away from your Cheval Blanc!
