Tuesday, March 31, 2015 - Pale yellow color. Lovely nose of sea salt, crushed chalk, quince and lime. Medium bodied, tangy acid. Dry and mineral-driven, but I like the pulpy tropical notes, like pineapple and kumquat drizzled with honey. Lots of sea salt and chalk dust notes though, along with hints of white tea and mussel shells that come out with time. Even more expressive on day two. Still going strong, still lively, a delicious wine.
