Monday, May 19, 2014 - Off the list at CUT, Las Vegas. Remarkably fresh and focused at the moment, with good promise to add some weight and depth if cellared properly, too. Given the very reasonable price-tag, I think it prudent to acquire several for personal consumption. Paired with CUT's Big Eye Tuna Tartare, Wasabi Aioli, Tosa Soy and avocado. And while the pairing was good, it wasn't great, but that's only because the execution of the Tuna Tartare was poor (the tuna looked like -overly- ground hamburger that had sat out at room temperature for an hour or more). recommended
