Saturday, December 29, 2012 - Alluring and perfect Chablis light straw gold colour. Nose is super sun-warmed oak with a whiff of warm and polished saddle leather and some buttery salinity in the background. Palate is very minerally.... crushed oyster shells, broken flint and granite....well-crafted malolactic fermentation to bring out just a hint of salted fresh butter....quite metallic on the back end. Fresh and vibrant...exceptionally so for 10 years old. Not much timbre or resonance on the finish but you can sense that it will emerge with more bottle age. Still very youthful, this is a gorgeous expression of the Chardonnay grape in a very pure form: the lean, almost austere, elegance of the form is not immediately obvious in its appeal but once it hits you it is captivating. My first Raveneau and well worth the anticipation. I'd love to try a much older vintage.
