Monday, December 29, 2008 - First night: iron and bright. Astringent on side of tongue but that is not a bad thing here. Fruity as well. Very fragrant upon opening, that good luscious cab bouquet.
2nd night: Much better. The sharp edges smoothed out and my tongue doesn't feel like it's being attacked with needles. Tannins evolved and softened yet there is a real nice drying feel in the finish.
Now last sip on 1/5/08 as it rested in corked bottle, this wine has completely transformed into a very good wine. Before it was bright and lots of cherry; now it has softened and calmed down. I also taste that Chilean alcohol heat and structure now. The alcohol is not the burning shellac type, rather, I can detect only on exhale. Convinced this wine requires lots of open bottle time if consumed now. Lay off this for 3-6 years for next one. And tannins very fine grained, almost a silt like sediment left in glass left out overnight.
