Friday, October 17, 2014 - Appearance: sockeye salmon with a tinge of copper. Very fine, persistent mousse. On the nose, intense red fruit, yeast, Chambord liqueur, hint of buttery biscuit. Quite rich on the palate, medium plus body, slight vinous at first. (I found that I enjoyed the wine even more when it's a bit flat the day after. The bubbles probably accentuated the alcohol. Try a quick decant just before serving. Finish quite long with notes of mineral. Good acidity backbone. Cheville (peg-shaped) cork indicating it should be consumed within a few years before it lets in the oxygen.
