Wednesday, July 22, 2015 - Burgundy Dinner at Jade Palace (Jade Palace, Forum Galleria, Singapore): Pretty good. This spoke of the quality of the vintage, but it was still really tight and partially asleep. On the nose, the remnants of new oak mingled with sweet blueberry, violet and light earthy notes. The palate was very symptomatic of 2005, with a blush of ripe fruit on the forefront very quickly giving way to fine but robust tannins and well-knitted acidity that gave the wine both a sense of purity and a certain reserve. The finish was long and full, with a nice lushness of fruit underpinned by that serious structure. A very good wine, technically vey correct, but this easily needs a decade or more.
