Monday, December 28, 2015 - Fantastic dinner tonight with two very good wines. The 07 PM Perrieres initially has some matchstick notes that blew off with air. Lovely lemon chiffon notes on a very well balance palate with great mid palate depth. Very good length with plenty of acidity.
The 00 Charmes Chambertin from a producer that I'm not that familiar with, however I was extremely impressed, especially given the vintage.
