Saturday, March 27, 2010 - A few 2007 Chateauneuf du Papes in Highlands: This is the most backward of the 2007's I have tasted yet. Very young and structured at first, but after an hour in bottle and glass, the wine awakens into an airy red fruited, spice infused, mineral driven beauty. It is certainly tannic and dusty dry, but the sweet red fruit, minerals, aromatic plants and flower petals, win the day. Glad I have six more of these. I am in love with the 2007 mostly grenache wines that see almost no wood, and this is another shining example. Recommend.
